Classic Polenta

4 cups water, divided
1 teaspoon salt
1 cup QuakerŽ or Aunt JemimaŽ Yellow Corn Meal
  1. In a medium saucepan, boil 3 cups of water and salt.
  2. Meanwhile, mix 1 cup of water and Aunt Jemima corn meal. Slowly add combined corn meal to boiling water. Stirring frequently, cook for about 30 minutes or until thicken. Pour into a small (8 x 8) baking pan. Chill for ~4 hours or overnight.
